If you haven’t seen that book, it describes so many ways to make breads, cookies, bars or anything similar to bread. There’s lots of tidbits about why you would do certain things or how to make yeast rise more. I tried to make their “Beautiful Burger Buns” today.
I started with the ingredients: flour, sugar, water, yeast, butter, salt, an egg and an onionFirst I added the yeast and waterAfter throwing all of the ingredients in, I put it into the KitchenAid with the dough hook attached and mixed it for a few minutesAfter taking it out of the KitchenAid, I put it into a lightly greased bowl and covered it to rise. This is what it looked like pre-riseAfter an hour, the dough rose a bit. This is what the dough looks like after the first rise.Next I divided the dough into eight pieces and put it on some foil and covered again to rise. This is what the eight buns looked like pre-rise.Here’s what the buns looked like after about 40 minutes of risingMeanwhile, I heated the oven up to 375 and then put the buns in for about 14 minutes.
